I have been cutting back on carbs and have been doing really well eating my favorite salads, chicken breasts, and low carb half-calorie rice. And I've been tracking macros, and realizing that sometimes it's hard for me to eat enough fat - at least without the hefty dose of sugar/carbs that usually go with it.
I started toying with the idea of making a fat bomb - mostly fat, but it had to taste delicious. And hopefully be in the form of chocolate!
These sweet coconut chocolate balls are a lot like Almond Joy, Mounds, or Bounty bars, but without the sugar rush (and crash!). The main thing they are made of is fat - which will leave your blood sugar on an even keel.

Everything You Need to Make some Sweet Coconut Treats
- Cream cheese - regular full-fat cream cheese is best. Allow time for it to soften if you won’t be doing it in the microwave.
- Butter - real dairy butter is what I use. If you need a dairy free version Earth Balance buttery spread contains the same fat grams as butter, so I would recommend that.
- Unsweetened dried coconut flakes - look carefully to make sure they are unsweetened. Coconut shreds with added sugar will add extra carbs.
- Zero calorie granular sweetener - I always use a combo of monk fruit and erythritol since that never upsets my stomach. Lakanto is a brand I really like.
- Salted whole almonds - optional, but highly recommended! That salty crunchy bite goes so well with the creaminess of the coconut balls. They are irresistible!
- Low carb chocolate chips - Bake Believe semi-sweet keto chocolate chips are what I use. Lily’s is a brand I also love, and I know there are others too. But watch out for the ingredient “maltitol” if you’re gluten free - it’s made of malt, which is a grain that contains gluten. Lily’s and Bake Believe do not contain maltitol, and my stomach loves them for it!

I think these are best made with salted whole almonds on top, but they are also delicious when you use different nuts too. Try these:
- Macadamia nuts, if you really want to splurge. They are SO amazing in this recipe!
- Sliced or slivered almonds, instead of whole
- Cashews
Dark chocolate is the perfect way (in my opinion) to top this homemade candy. But there are other low carb chocolate options. Low carb milk chocolate is readily available, although very sweet. If you are a true dark chocolate lover, I would try extra dark chocolate in the form of Keto chocolate chips.
I would not recommend white chocolate (because it's a little too sweet), and definitely don’t use unsweetened chocolate (very bitter).
Best Places to Buy Ingredients
🍪 Low carb chocolate chips - I buy mine at Sam’s Club (a membership store), but I see them often in grocery stores and at health food stores. They can be pretty expensive so watch for them to go on sale.
🥥 Unsweetened dried coconut flakes - I have found these at Walmart and Trader Joe’s but you’ll have to chop them a little more finely for this recipe. A food processor works great for that. I buy mine from a local Mexican grocery store. Health food stores would also be a good place to check.
🍭 Zero calorie granular sweetener - I like Lakanto granular sweetener which is a combo of Monk fruit and erythritol. Feel free to use any sweetener you prefer. You can even use honey or maple syrup if you want a totally clean and natural candy, but keep in mind that it will increase the carb content.

How to Make These Sugar-free Treats
If you've got a microwave and a fridge - then you can sink your teeth into these rich and creamy treats in less than a half hour. Let's goooooo!

Step 1. Prep cream cheese and butter by softening it, either at room temperature or in the microwave (try 15 second intervals to start)

Step 2. Combine butter, cream cheese, vanilla, sweetener, and coconut flakes.

Step 3. Using a scoop or a mold form the coconut mixture into shapes and drop onto a lined baking sheet.

Step 4. Chill in the fridge, or freeze until firm. I usually freeze them - because of the fat content they won't turn completely hard.

Step 5. Once they’re solid, dip each candy shape into the melted chocolate. Spearing them with a fork helps!

Step 6. To avoid making a mess, just dip the tops into chocolate and top with an almond. Chill or freeze until firm.

These will turn soft at room temperature, so store them in the fridge in an airtight container to keep them nice and firm.
You could also freeze these in a freezer safe container or freezer ziplock bag. Since they contain so much fat, you can still eat them in their frozen state - they won’t be completely hard.)

Ingredients
- 8 oz. cream cheese, softened
- ¼ cup butter, softened
- 1 cup shredded coconut, unsweetened
- 1 teaspoon vanilla
- ¼ cup granulated zero calorie sweetener (I like monk fruit)
- 24 whole almonds, salted (optional)
- ¾ cup sugar free dark chocolate chips
- ¼ teaspoon coconut oil
Instructions
- If your cream cheese and butter are too hard to mix with a hand mixer, soften them in the microwave for about 10 seconds at a time until they are easy to stir with a spoon.
- In a medium sized bowl, cream the cream cheese, butter, vanilla, and sweetener until smooth. A hand held mixer is the perfect tool for this.
- Stir in the coconut. Form the mixture into 1 inch balls, and drop onto a parchment paper lined baking sheet (or use a silicone candy mold). Chill in the fridge until firm.
- In a small bowl, heat the chocolate chips and coconut oil until melted. Start with 1 minute on high power, stir, and then in 30 second intervals after that until it’s completely melted.
- Once the coconut mixture is firm, dip the top of each ball into the melted chocolate, and add an almond to each one. Put on a plate or a tray and return to the fridge until firm. They can also be frozen very successfully. Due to the high fat content they will not freeze very hard, so keeping them in the fridge or freezer is recommended.
