Fit & Fresh has come out with some awesome products, called the Gatherings Collection, that are just perfect for summer picnics, barbecues, and potlucks. Why I love my Gatherings 9x13 Server:
- It's HUGE! So many things are going into this dish - lasagna, Baked Ziti, and many other casseroles. I will be using it soon at a brunch, where I will fill it with gluten free french toast sticks ( that recipe will be coming soon!). It would also be great for cold pasta salads and potato salad - yumm, barbecue season will be even more fun this year!
- It has a sturdy carrying strap. Have you ever taken a hot dish to a party, where you had to balance it on a towel on your lap in the car ride over? Ugh, I have done that far to many times ( and even burned myself before... not fun)
- It has a clear lid that snaps tight. Have you ever taken a hot dish to party, balanced on your lap on a towel, topped with a sheet of foil, and as your husband turned a corner some of it slopped over onto your leg? Well ... that's how I burned myself ( see above)
- It has the added protection of an additional solid colored lid ( it's a pretty aqua color) that also doubles as a base to set the dish on so it won't make the table too hot!
- The clear, glass baking dish comes out so you can use it as a regular 9 x 13 baking dish. You can never have too many 9 x 13 baking dishes, right?

One more thing: a recipe! What I served in the photos above is my special Healthy Alfredo Sauce, tossed with gluten free spaghetti, chicken, and grilled veggies. I hope you'll love it as much as my family does!
Healthy Alfredo Sauce
This healthy Alfredo Sauce gets its rich, creaminess from low fat cottage cheese! Blend all the ingredients in the blender or food processor and heat it briefly on the stove to thicken. So delicious!
- Total Time: 25 minutes
- Yield: 6 servings 1x
Ingredients
- 1 cups and ½ cottage cheese (2% milk fat)
- 1 cups and ½ milk (or canned low fat milk)
- 2 tablespoons cornstarch
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ⅛ teaspoon pepper (or to taste)
- 1 egg (or 2 whites)
- ½ cup grated parmesan cheese
Instructions
- Place the cottage cheese, milk, cornstarch, garlic powder, and salt in a blender or food processor. Process until completely smooth.
- Pour into saucepan on medium heat.
- Add the egg, cheese, and pepper to taste.
- Heat until thickened.
- Serve immediately.
Notes
This protein-rich sauce is so versatile! Serve it over pasta, or toss with rice, or potatoes. This can also be used as a delicious white pizza sauce - you'll love it!
