If you have to follow a gluten free diet due to celiac disease, gluten intolerance ( like me), or for other health reasons, you probably have a list of foods that you miss. One of the foods on my list ( and I'm a little bit ashamed to admit it) is a McDonald's Sausage Biscuit with Egg. I have been searching for a good gluten free biscuit or english muffin for over 10 years now, but with no success - until recently!
Glutino makes a fantastic english muffin that has that perfect chewy tenderness that I have been missing for so long, and it also manages to have a flaky, almost buttery quality very much like a biscuit! I never thought I'd say this, but I like their english muffins even more than I used to like regular "wheaty" english muffins! When we discovered that they sell these in good-old Walmart and Target, my first thought was that I just had to make a Sausage-McBiscuit-Muffin with Egg... but around here we just call them "egga muffins". I thought I should give them more of a recognizable name, so for blog purposes, I will call them: Gluten Free Breakfast Sandwiches 🙂

These are easy to make, and not too bad nutrition-wise. I used extra lean pork sausage, an egg, and a thin slice of gouda cheese on these little beauties. I find that using a smaller portion of cheese, but one with a stronger flavor is the way to go for us - less calories overall, but with a very satisfying, cheesy flavor.
There's a trick to making the sausage just right, too. I am lucky enough to have a butcher in my favorite grocery store who makes very lean pork sausage by the pound. If you don't have access to that, you could use turkey sausage, lean ham, or turkey bacon - yum!
I use a hamburger press to make very thin sausage patties. They won't make a good breakfast sandwich if they are thick like burgers. I wet my hamburger press with water - it really helps when working with very lean meat. I shape the patties and flash freeze them on a waxed paper lined cookie sheet, then transfer them to a freezer bag, like this:
Here is the hamburger press I use - it's a great price, and is really durable. No need to spend a lot for one of these!
For the eggs, I have a really cool trick: I use a Nonstick Muffin Top Pan and bake the eggs in the oven. Its the perfect size for making perfectly round, fried eggs that fit just right on those Glutino english muffins!
I preheat the pan in the oven at 350 degrees, then spray it with a little cooking spray. Then I crack one egg into each cavity, break up the yolk a little bit, and sprinkle with salt and pepper. I do these first, since they take a while to bake - about 10-ish minutes, depending on how hard you like your yolks.
While the eggs are cooking, I cook the sausage patties and toast the muffins. Then all that's left to do is stack everything together in sandwiches, and eat!
There are so many things that you can use these awesome english muffins for:
*mini pizzas
*sub for a hamburger bun when you're stuck with no GF options
*grilled cheese - really, try it!
*just toasted with a little butter and jam - yummm, this is one of my favorite little treats!
Ha ha, I bet you thought this was a sponsored post, right? Nope, I'm just a big fan who likes to spread the word when I find fantastic gluten free products!
And although I love to bake and create my own gluten free recipes, I just couldn't do english muffins any better than Glutino.

I have a local grocery store that makes their own sausage, and it's gluten free. But Farmland makes a gluten free sausage, and so does Applegate Farms - but you would have to cut the links to fit an english muffin.
