Who eats fried rice for breakfast? Well, I really hope it will be YOU after reading this post! Breakfast fried rice combines all the delicious things you like in an omelette with brown rice to keep you full until your next meal, and it's a great way to sneak in some vegetables. If you've read my Weekly Food Prep 101 post, then you know how important I think it is to eat vegetables at every meal - yes, even breakfast!
This recipe is a great way to use up a bunch of leftovers, too. My recipe contains juicy sausage, tender eggs, peppers, mushrooms, and spinach, but there are so many ways you could make this. Oooh, think how delicious this would be with bacon!
If you have some rice leftover from last night's dinner, then this comes together really quickly in the morning for breakfast. First cook the sausage and veggies, then stir in the cooked rice. Make a well in the center, and crack in a few eggs. Then it's a matter of stirring it all together until the eggs are set, adding a little salt and pepper, and it's time to eat! The eggs really make this dish - they soften up the whole-grainy-ness (I'm calling that a word now) of the brown rice, and binding it all together in the creamy, delicious way that eggs do.
This breakfast is great to grab and go if you're in a hurry. It also tastes great reheated the next day, so you can make a big batch and have breakfast ready for a few days at a time. I hope I've convinced you to try this hot, yummy, meal in a bowl for breakfast - you won't regret it!

- Total Time: 20 minutes
- Yield: 4 servings 1x
Ingredients
- 1 pound extra lean sausage (or turkey sausage)
- ½ cup diced bell pepper
- ½ cup sliced mushrooms
- ½ cup frozen chopped spinach
- 2 teaspoons oil
- 4 cups cooked brown rice
- 3 eggs
- salt and pepper to taste
Instructions
- Brown sausage and vegetables in a large skillet on medium high heat.
- Stir in rice until well combined.
- Make a well in the center of the rice mixture.
- Add the oil in the well.
- Crack 3 eggs directly into the well.
- Cook and stir rapidly on medium high heat, scraping the bottom of the skillet well, until the eggs are just set but still tender.
- Add salt and pepper to taste and serve.
