Ingredients

  • 8 oz. cream cheese, softened
  • 1/4 cup butter, softened
  • 1 cup shredded coconut, unsweetened
  • 1 teaspoon vanilla
  • 1/4 cup granulated zero calorie sweetener (I like monk fruit)
  • 24 whole almonds, salted (optional)
  • 3/4 cup sugar free dark chocolate chips
  • 1/4 teaspoon coconut oil

Instructions

  1. If your cream cheese and butter are too hard to mix with a hand mixer, soften them in the microwave for about 10 seconds at a time until they are easy to stir with a spoon.
  2. In a medium sized bowl, cream the cream cheese, butter, vanilla, and sweetener until smooth. A hand held mixer is the perfect tool for this.
  3. Stir in the coconut. Form the mixture into 1 inch balls, and drop onto a parchment paper lined baking sheet (or use a silicone candy mold). Chill in the fridge until firm.
  4. In a small bowl, heat the chocolate chips and coconut oil until melted. Start with 1 minute on high power, stir, and then in 30 second intervals after that until it’s completely melted.
  5. Once the coconut mixture is firm, dip the top of each ball into the melted chocolate, and add an almond to each one. Put on a plate or a tray and return to the fridge until firm. They can also be frozen very successfully. Due to the high fat content they will not freeze very hard, so keeping them in the fridge or freezer is recommended.
