lemon poppyseed dressing in jar

Creamy (and Healthy) Lemon Poppyseed Salad Dressing

The sweet flavor in this creamy dressing comes from honey, not sugar. Tangy lemon juice, crunchy poppyseeds, and creamy yogurt tastes just like a spoonful of sunshine!

  • Total Time: 5 minutes
  • Yield: 5 servings 1x

Ingredients

Scale
  • 1/2 cup mayonnaise
  • 1/2 cup plain, nonfat Greek yogurt
  • 1/3 cup lemon juice
  • 1/4 teaspoon onion powder
  • 1 tablespoon honey
  • 1/8 teaspoon xanthan gum, optional
  • 2 teaspoons poppyseeds

Instructions

  1. Combine all ingredients in a jar, or a salad dressing bottle.
  2. Stir briskly with a whisk or fork, or add the lid to the jar and shake vigorously until blended.
  3. Pour over your salad.

Notes

Notes: Remember, xanthan gum does help emulsify this and keep it thick and creamy, but if you don’t normally use xanthan gum it can be left out. Just shake it each time you want to use it.
