- 3 Tablespoons unsweetened cocoa powder
- 1/2 cup peanut butter (or other nut butter such as almond or cashew butter)
- 1/4 cup + 2 Tablespoons honey
- 1/4 cup unrefined coconut oil
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- 1 1/2 cup rolled oats ( quick is preferred, but regular works too)
- 1 Tablespoon flaxseed meal
- 1/3 cup unsweetened dry coconut flakes
Instructions
- Combine cocoa powder, nut butter, honey, coconut oil, and salt in a microwave-safe bowl.
- Heat on high for 1 minute at a time, stir, and heat for 20-30 seconds more if needed to melt all the ingredients. Add the vanilla.
- In a larger bowl combine the oatmeal, flaxseed meal, and coconut flakes. Stir to blend together.
- Pour the liquid mixture into the dry mixture and stir until the ingredients are very well incorporated. This might seem dry at first, but be patient and keep stirring - it will come together.
- Using a small cookie scoop (or a spoon) scoop and pack the mixture into a ball.
- Drop it into a tray or dish lined with parchment paper.
- Chill uncovered in the fridge until set. The texture will be like very firm fudge.
- Store in a covered container in the fridge, or freezer.
Notes
If you can't eat peanuts, you can substitute another nut butter like almond butter or cashew butter. You may need to add a pinch more salt to the liquids after heating in the microwave - taste and adjust to your liking.
