No bake chocolate cookies are not sweetened with sugar, and are gluten free and dairy free.
They have just the right balance of salt, sweet, chew, and fantastic fudge flavor. But the best part is - all the ingredients in this treat are anti-inflammatory and are so good for you!
Whaaat? Chocolate treats that help your body feel better? Yup!
And you don’t have to heat up the kitchen for this one, it chills in the fridge. Plus it only takes a few minutes to mix up.
How could you even say no to these? You can’t.
I know because I can’t. They are my number one go-to when I need a sweet and salty chocolate fix.
Ingredients, and How They Fight Inflammation
- Cocoa powder is rich in theobromine which helps fight inflammation and can also protect you from heart disease and cancer.
- Peanut butter contains resveratrol which can ease joint pain. If you need a peanut-free recipe, scroll down to find the yellow box for more information.⤵️
- Honey is rich in antioxidants which have been proven to fight inflammation and pain.
- Coconut oil can help clear up UTI and kidney infections, increases the HDL cholesterol (the good kind), and helps convert the LDL cholesterol (the bad kind) into good.
- Oatmeal contains 24 plant compounds that have anti-inflammatory properties, and is one of the best foods to fight inflammation and pain.
- Flaxseed meal is another top inflammation fighter. It contains flavonoids which fight inflammation in joints and is helpful in preventing heart disease. For more recipes with flaxseed meal, check out my pumpkin protein pancakes or gluten free soft gingersnaps.
- Unsweetened coconut flakes contain polyphenols and manganese that boost your immune system and fight inflammation.

Instructions
You really can pull this treat together in just a few minutes. The hardest part about this is waiting for it to become firm in the refrigerator!
- Combine cocoa powder, nut butter, honey, coconut oil, and salt in a microwave-safe bowl.
2. Heat on high as needed to melt all the ingredients. Add the vanilla.
3. In a larger bowl combine the oatmeal, flaxseed meal, and coconut flakes. Stir to blend together.
4. Pour the liquid mixture into the dry mixture and stir. This might seem dry at first, but be patient and keep stirring - it will come together.
5. Using a small cookie scoop (or a spoon) scoop and pack the mixture into a ball.
6. Drop it into a tray or dish lined with parchment paper.
7. Chill uncovered in the fridge until set. The texture will be like very firm fudge.
8. Store in a covered container in the fridge, or freezer.
How to Make this Peanut Free
- If you cannot eat peanuts, this recipe works well with almond butter or cashew butter in place of the peanut butter.
- You may need to add a touch more salt after you microwave the liquids to balance out the flavors, since peanut butter tends to be pretty salty.
- Ideas for other nut butters (I have not tried these, but they sound so good to me): sun butter (sunflower seed butter), macadamia nut butter, hazelnut butter

Ingredients
- 3 Tablespoons unsweetened cocoa powder
- ½ cup peanut butter (or other nut butter such as almond or cashew butter)
- ¼ cup + 2 Tablespoons honey
- ¼ cup unrefined coconut oil
- ¼ teaspoon salt
- 1 teaspoon vanilla
- 1 ½ cup rolled oats ( quick is preferred, but regular works too)
- 1 Tablespoon flaxseed meal
- ⅓ cup unsweetened dry coconut flakes
Instructions
- Combine cocoa powder, nut butter, honey, coconut oil, and salt in a microwave-safe bowl.
- Heat on high for 1 minute at a time, stir, and heat for 20-30 seconds more if needed to melt all the ingredients. Add the vanilla.
- In a larger bowl combine the oatmeal, flaxseed meal, and coconut flakes. Stir to blend together.
- Pour the liquid mixture into the dry mixture and stir until the ingredients are very well incorporated. This might seem dry at first, but be patient and keep stirring - it will come together.
- Using a small cookie scoop (or a spoon) scoop and pack the mixture into a ball.
- Drop it into a tray or dish lined with parchment paper.
- Chill uncovered in the fridge until set. The texture will be like very firm fudge.

Notes
If you can't eat peanuts, you can substitute another nut butter like almond butter or cashew butter. You may need to add a pinch more salt to the liquids after heating in the microwave - taste and adjust to your liking.
