Halloween food doesn't have to be all about candy. These cute little candy corn fruit cups don't contain any candy (ore even sugar), and they have a nice balance of healthy carbs and protein. These would be fun for a treat for a Halloween party, or a nice snack or healthy dessert.
WHAT'S IN THIS RECIPE
- low fat cottage cheese, or you could also use vanilla greek yogurt
- mandarin orange slices, canned in fruit juice
- pineapple tidbits, canned in juice
TIPS AND TRICKS
- I used clear disposable cups so I could make a bunch of these at once and keep them in the fridge for snacks. You could also use clear glass dessert dishes.
- I used cottage cheese because it's so thick. Yogurt could also work, but make sure to use greek yogurt. The fruit tends to sink down into regular yogurt and then the layers are lost.
- The layers look much better if the fruit is drained really well in a colander before making the fruit cups.
