One of the hardest meals to adjust to when going gluten free has got to be breakfast. Breakfast is traditionally a big starchy carb-fest, with pancakes, waffles, muffins, and biscuits to satisfy our growling stomachs. So what's a hungry GF person to do?
I have gathered 8 of my favorite gluten free breakfast recipes for you today, so you'll never go hungry again (cue the Gone With the Wind theme song) - and as an extra special bonus, they are all good for you, too!
1. In the upper left hand corner, we have Gluten Free Blueberry Muffins. Not only are these gluten free, but I have slashed the calories and boosted the protein and fiber by using greek yogurt, coconut flour, almond milk, and oats. They are a real treat for breakfast, and super easy to make!
2. Next to that, front and center ( because I love these SO much!) are some of my Gluten Free Breakfast Sandwiches. These are kind of like McDonald's sausage-egg muffins, but BETTER! They are made with extra lean sausage, egg, and a very thin slice of gouda cheese ( so you get a lot of flavor for less calories). But the thing that makes them reeeeeally amazing for us gluten free folks are these english muffins from Glutino. I have an everlasting love for these, I'm telling you!
3. In the upper right hand corner ( in the collage above) is a real family favorite - Breakfast Fried Rice. My husband and I invented this one - he could eat rice for breakfast, lunch, and dinner, so we came up with a very hearty way to eat rice for breakfast. It has sausage, egg, mushrooms, peppers - pretty much anything you could put in an omelette could go in this. And it tastes great re-heated straight from the fridge, so you can make a big batch and have breakfast ready to go for a few days at a time!
4. See that beautiful big bowl with red berries up there? That, my friend, is another great breakfast invention - the smoothie bowl. What is a smoothie bowl? It's essentially a super thick protein smoothie that you eat with a spoon, topped with fresh fruit, nuts, granola, or even chocolate chips. It's a fantastic way to get a big dose of nutrients ( including vegetables - sssh!), but you can trick your brain into thinking you are just eating a delicious bowl of ice cream!
5. Next to that is my recipe for French Toast Sticks. This is another one that you can make a big batch and save for future delicious ( and super quick!) breakfasts. And my favorite thing about these? Even yucky gluten free bread experiments ( you know what I mean, don't you) can be dipped in batter and baked into a crsipy, yummy success!
6. This next one takes about 2 minutes to make, and everyone loves it - whether they eat gluten or not. It is my Chocolate Protein Smoothie. Read how I handle my family's busy morning protests of "I don't have time to eat today" with this yummy, chocolately shake!
7. Raspberry Coconut Oatmeal is a really simple thing I made up for breakfast a long time ago, and it was my husband who suggested I make it into an official recipe and share it on my blog. So I did 🙂
8. And last, but not least: the most nutritious food you can eat on this list - my Tropical Green Smoothie! This is great for breakfast, but it's also amazing for when you really need a boost of energy. Looking at those beautimus foods makes me want to devour only items that are Gluten free. I know that just because they are GF it makes all food more heathy and you can devour as much as you want without any of those repercussions. Pile it on GF lady Im just waiting to shove those foods down my throat!
