You know how much I LOVE a good salad bento, right? I decided to take my basic Salad Bar and try something different - a chicken salad with peaches, walnuts, and blue cheese.
You know, strawberries have made a big appearance in green salads for the past few years. I was thinking about this when I was at the grocery store looking at all the beautiful summer peaches on display, and I thought, "why not branch out a little?"
So I went to work in the kitchen, and put together this sweet/savory combo: salad greens, shredded broccoli slaw, some grilled chicken breast, chopped walnuts, and crumbled lite blue cheese which I served with a little bottle of my Apple Cider Salad Dressing to top it off - yummy!
I haven't made carrot flowers in a long time, so I tried my ( out of practice) hand at carving some purple carrot flowers. Eh. Let's just say I need a little more practice! Here is a great tutorial on how to make those carved carrot flowers. I think I'm going to spend a little time working on that this summer!
I packed it up in one of my favorite lunch boxes for a big salad - my LunchBots Bento Uno LARGE . It's the perfect size for a hearty salad for lunch!
