Here's another easy lunch idea from my June 2 week meal plan, Beef and Edamame Salad. It is so easy to throw together when you have a salad bowl and a salad bar made for the week.
Here's what's in this lunch:
Salad greens ( from the salad bar ideas linked above), shelled and salted edamame, red bell pepper strips, and diced roast beef fill the main compartment of my Fit & Fresh Kids' Soft Touch Lid Meal Carrier. On the side are some cashews and sesame salad dressing to top it off. To go with that, I packed grapes and cantaloupe.
Hubby said it was delicious! I put this whole lunch together in about 5 minutes, thanks to the weekly food prep guide I used, which is coming soon in my June meal plan. It will show you how to get a week's worth of breakfasts, lunches, dinners, and snacks ready in one day so you can eat healthy all week long!
Soon I will have a 1 week basic plan, and a 2 week plan for June available. I am working on a comprehensive 2 week plan for each month of the year, and I will make those available as soon as I get them created and tested. I'm really excited to share these meal plans with you!
