My son has officially declared this the best quesadilla I've ver made. His actual words - "this should be in a restaurant!" I have to admit, it was so good we had it for lunch 2 days in a row, and now I'm planning to serve it for dinner, too.
And it was so very easy - leftover beef pot roast, black beans, cheese, and tortillas.
But the thing that really makes this recipe stand out is the dipping sauce! Oh. My. Goodness. Barbecue sauce + salsa = Incredible!!
The idea for this one came to me while we were on a road trip. As I recall, we were getting pretty hungry but we were crossing a mountain pass in Colorado, so it would be a while before we located a restaurant. I was brainstorming some good recipe ideas with my family, and this one just popped into my head ( I think my best food ideas come to me when I'm the hungriest)!
I saved this one for June because I thought it would be a great recipe for the grill. If you decide to make this one on the grill, would you please leave me a comment and tell me how it turned out? Because the day I cooked this the weather didn't cooperate. Boo. The good thing is, it is amazingly delicious cooked in a pan on the stove, too!
My favorite things about this recipe:
- It was made with leftover beef pot roast - don't you always have a hard time trying to figure out how to use up leftover roast beef? I know I do.
- It's healthy. Even though that photo shows cheese oozing out onto the plate, there's less cheese there than you might think! I have a trick for this - when sprinkling cheese on the tortilla, keep it around the outside edges, instead of spreading cheese all over the tortilla. When you're ready to eat it, you see that cheese dripping out the sides, and oh man! Haven't I always said you eat first with your eyes? It's true.
- This one ( like so many of the foods you see on my blog) is gluten free. I love to make homemade tortillas, but when I can't spare the time we LOVE Udi's gluten free flour tortillas. And I just discovered this coupon, right here!
- did I mention the dipping sauce!?!

This looks sooo good. I love black beans. I've just been using corn tortillas since going gluten free. I didn't know Udi's made "flour" tortillas, apparently they have them at my grocery store but I haven't seen them yet. I will definitely search for them next time I go shopping. Thanks for the recipe!
