Today's lunch was packed in one of my new Urban lunch boxes by easylunchboxes.com. It was really easy to make, and only took a few minutes. I made a basic tuna sandwich, topped it with a big leaf of romaine lettuce, then used a shamrock cookie cutter to cut out an opening in the top slice of bread. * Tip - spread a little mayo or butter on the back of the top slice of bread to make it stick to the lettuce. That way the bread won't slide around and look like a brown and green massacre by lunch time!
On the side are some purple carrots and sugar snap peas from Trader Joe's, along with some kiwi and strawberries. The gorgeous colors of the fresh produce added just the right touch to this simple but healthy lunch - couldn't be easier! I also added a bag of Trader Joe's sour cream and onion cheese puffs to round it out.
