This oatmeal recipe is so simple - it can be made in less than 2 minutes in the microwave. I've actually been making this healthy little treat for nearly a year now, but it was my husband who suggested I make this into an official recipe for my blog. It's his very favorite way to have oatmeal. It's such a warm, sweet, comfort food that we sometimes have it for a bedtime snack!

The ingredient that elevates this basic bowl of oatmeal to the level of "comfort food" and "healthy little treat" is this: coconut oil. Are you surprised? I never would have thought of putting oil in my morning oatmeal, but when I developed the goal of getting a serving of healthy fats in each of my meals, I had to get creative. We were pleasantly surprised to find that coconut oil doesn't make oatmeal taste oily at all - it makes it creamier, sweeter, and it smells heavenly!
The only other ingredients are oats (of course), protein powder ( I used vanilla whey protein), and some low-sugar or all-fruit raspberry jam. I like Smucker's All Fruit jam, or Trader Joe's Organic Reduced Sugar Raspberry preserves. I also add a little splash of milk after it's cooked. My favorite is unsweetened almond milk, but regular milk or even coconut milk is good too.

Ingredients
- ½ cup quick oats
- 1 cup water
- 1 tablespoon coconut oil
- 1 tablespoon all-fruit raspberry jam
- a sprinkle of unsweetened dried coconut, optional
- milk of choice, optional
Instructions
- Mix the dry oats with the protein powder in a microwave-safe bowl. Use a bowl large enough to allow for the oats to expand when cooking.
- Stir in the water and coconut oil.
- Microwave on high for 1.5 minutes.
- Stir, and top with raspberry jam, milk, and dry coconut, if desired.
