I wanted to try something new with sandwiches today. We had grilled chicken the night before, so I thought it might be fun to try Chicken Caesar Salad, but wrapped in a tortilla for a change. Can you believe I did NOT make a salad this time? I do tend to get a little carried away with salads ... ahem... How To Make a Salad Bar, How To Make Salad Stay Fresh All Week, Very Best Lunch Salads...but I digress, ha ha!
This Chicken Caesar Wrap is simple - on the tortilla lay a slice of cheese ( I used light provolone), sliced grilled chicken, finely chopped romaine lettuce, and shredded carrots. Drizzle light caesar salad dressing over it all, and roll it up tightly. These tortillas were small, so I made my son two wraps sliced in half. On the side are some grapes, plus one raspberry - can you spot the secret raspberry? I didn't even notice it until I edited the photos! I just grabbed a handful of grapes when I packed this lunch and somehow a raspberry came along for the ride 🙂 To round it out, I included some baby carrots and some hummus.
I made the same thing for my husband, and they both said they loved it! Yay, success!
