Here's a simple sandwich lunch I made for my 16 year old son - and he even appreciated the carrot flowers 🙂  I packed it in my Fit & Fresh Lunch Pack Carrier.  This lunch box is a great one for packing a sandwich, especially one with a bun. It has a nice, roomy "lower level" that can hold something a little larger, like a sub sandwich or a salad. In this case, it is a chicken, bacon, and cheese sandwich on one of my homemade gluten free buns.
The upper level of the lunch box is holding a spiral cut cucumber, string cheese, orange carrots, purple chunky carrot flowers, and some ranch dip in an EasyLunchboxes Mini Dippers  container.  Cutting the cucumber into a spiral shape was really easy with this Spiral Slicer . My son likes eating cucumbers this way - it's kind of bouncy like a spring (even teenagers like their food to be fun) !
I've had a few requests for me to show how I make those chunky carrot flowers, so I've made a photo tutorial so you can see how I do it.
Some important things to remember:
*Keep the carrot chunks on the short side - makes cutting a lot easier!
* trim the carrot so it stands straight while you cut it - a wobbly carrot is really hard to work with
* keep a firm grip on the carrot while cutting ( not easy to show while managing a camera, though!)
*Like all cool skills, this takes a little practice - but  not too much - so don't give up!
Adding a few chunky carrot flowers to your child's lunch is an easy way to get them to try these colorful carrots if they've never had them before.

I love the idea of one new food every week. When are you starting the challenge? And where did you get your recipe for gluten-free buns? I should make some for my daughter and grand-daughter.

I think we will officially start the challenge next week, and I'll blog about how we do as it goes along! As for my GF bread recipe, I am currently working on a GF recipe collection ( which is quickly turning into a cookbook-sized document!) that I hope to share soon... but it may still be a while, I'm afraid 🙂
