- Super Food Salad
- 1 bunch of raw kale (stems removed and finely chopped)
- 1 8 oz . bag of frozen shelled edamame (thawed to room temperature)
- 1/3 cup of dried cranberries
- cup about 1/3 ( more or less (depending on taste) of salted sunflower kernels)
- 1/4 cup raw (or salted cashews)
- 1 large carrot (grated)
- cup about 1/3 to 1/2 bottled lite raspberry vinaigrette (to taste, or homemade)
Instructions
- Combine all ingredients in a large bowl and toss together. Cover and chill for several hours before serving, as the flavor improves over time.
