It seems like it was only yesterday that I promised you a new gluten -free recipe for my "Friday recipes" plan that I had at the beginning of June... but it's been a week since I last posted! where has the time gone? My brain is really in serious Summer Mode, ha ha : ) It's been so long now, that I'll just wait until tomorrow to post my recipe. But I'll at least tell you what it is - Gluten-Free Graham Crackers! Here's a sneak peek for tomorrow:

Now, back to today's lunch -
This recipe came from the July issue of Clean Eating magazine.
I love grilled chicken salad and blue cheese, so when I saw this I knew that would be the first thing I would make from this month's issue. And I was not a bit disappointed! The orange and herb marinated chicken is absolutely mouthwatering! I haven't eaten my lunch yet, but I couldn't resist a couple of tastes of the chicken when I chopped it up for my bento : ) Also, my daughter asked what I was cooking that smelled so good, and she was happy to hear we are having more of that chicken grilled for dinner tonight!
The salad in the magazine had carrots, jicima, yellow peppers, grape tomatoes, lite blue cheese, and chicken. There's a recipe for the salad dressing too that I tried, and it's pretty good - it's like ranch dressing, but a little sweeter.
I couldn't resist spiffing up my salad with some bento touches, so instead of shredding the jicima I cut it into thin slices and used a mini star cutter to make my white stars : ) Here's the exact set where the star cutter comes from - I love this set because it's very sharp and sturdy so it can cut through hard vegetables easily.
Here's my meal plans for the day:
breakfast - 2 GF waffles with sugar free syrup, and 1 egg white plus 1 whole egg
snack - I tried out a recipe idea I had for chocolate protein pudding that turned out pretty well... it may show up in my blog one of these days : )
lunch - the bento shown above - I can't wait to eat it as soon as I'm done typing!
afternoon snack - 1/ 2 cup cottage cheese and ½ cup pineapple
dinner - Orange and Herb grilled chicken, wild rice, and cheesy zucchini. I'll probably put out my little salad bar to go with it
Exercise today was just yoga. I have been feeling tired and achy for several days now, and I'm going to the doctor to see about getting a change in my thyroid meds. Yoga does do wonders for achy joints, though!
