Heart Beet Salad for Valentine's Day

Here is a pretty bento I made - just for myself! It's healthy, diet-friendly, and delicious.

Traditionally, Valentine's Day = lots and lots of candy, just like so many other holidays now. One of the reasons making bento appeals to me is the opportunity to celebrate special events and holidays by making healthy food fun and memorable. You don't need sugar cookies or cake to send "I love you" messages to the people you care about. Take those same sugar cookie cutters and make heart-shaped beets instead!

This bento is very simple - it's the colorful veggies that are the stars of this eye-catching meal. The foundation is salad greens from my weekly Salad Bowl, topped with grilled sirloin steak strips, chunks of steamed purple potato, lite blue cheese, and beets. The beets are just canned sliced beets that I cut with a mini heart shaped cookie cutter.

The perfect salad dressing for this is my Italian Tomato Vinaigrette. On the side I had a few rice crackers and a heart shaped boiled egg. It was a perfectly pretty lunch! I think I'll make my hubby something similar ( but manly, of course) for Valentine's Day 🙂
